OLALA! was a French company pioneering 100% plant-based seafood for restaurants.
To win over Dutch diners, I developed a bold range of recipes for local restaurants, wholesalers, and caterers. From salmon fried rice to buttery brioche tuna rolls, each dish showed chefs and buyers that next-generation fish could be every bit as satisfying as the real thing.
The products made an impact far beyond the kitchen, with dishes showcased at demos and events to inspire the hospitality industry.
